Duck meat and giblets make up 52% of the recipe, with potato, carrot and apple behind them and a dried herbal mixture that includes peppermint, caraway, fenugreek, liquorice root, turmeric, fennel seeds and camomile. At 9% protein and 6% oils and fats, it is the moisture rather than added fat that gives them their soft texture.
