Herencia Mexicana, "Mexican heritage," is a traditionally made tequila produced at NOM 1079, the Agave Tequilana Productores y Comercializadores distillery in the southern Los Altos highlands of Jalisco (earlier bottlings came from NOMs 1586 and 1465). The process is traditional throughout: mature blue Weber agave slow-cooked in stone and brick ovens, fermented as 100% agave, and double distilled in copper pot stills, then bottled at 40% ABV (80 proof). The Añejo spends at least a year in oak, the legal minimum for the category, and comes in the brand's antique-looking glass bottle. The producer describes it as shiny and crystalline with amber tones that reflect its full body, with an aroma of cooked ripe agave, a subtle touch of vanilla and a delicate fine-wood note, and a palate that tastes like agave fresh out of the oven, finishing persistent and smooth. Tequila Matchmaker raters call it the definition of a solid old-school añejo, agave forward with butter, honey, caramel and oak. Pour it neat or over a large cube, or use it for an añejo Old Fashioned where the agave still needs to show through the wood.
