Air-dried lung, cut into flat steaks and slowly dried until it is firm but still gives under a dog's teeth. Lung has an open, spongy structure, so it tears rather than shatters — a dog can get properly stuck into it without the tooth risk that comes with horn or bone.

That texture is what makes it useful at both ends of a dog's life: puppies past weaning and older dogs with tired teeth manage lung when they cannot manage a dense sinew. At 75% protein and 9% fat it is lean enough to hand out as a training reward without unbalancing the day's feeding.
